This is one of our FAVORITE recipes for a quick night meal. I like to make my own pizza dough when I have time, or you can use flat bread pitas to make it easier (you can buy these at Costco and work GREAT for pizza crust!). The alfredo sauce is delicious :)

Fettuccini Alfredo Chicken Pizza
1 Pizza dough recipe or 1 packabe Flat Bread Pitas
1 c. ranch dressing
1 T. garlic cloves, minced
2 t. basil
½ c. shredded Parmesan Cheese
Toppings:
Chicken or sausage
Green onions
Vegetables (Mushrooms, Zucchini, yellow squash, onions, etc.), diced or cut thin
Tomatoes diced small
Artichokes(optional)
Mozzarella Cheese

Preheat pizza stone at 400 degrees. Roll out crust, or lay pitas on stone. Mix ranch, parmesan, basil and garlic in a bowl. Spread mixture over crust. Sauté meat and vegetables together until soft. Put sauce on pitas or dough, put meat mixture on top and then sprinkle with mozzarella cheese. Bake at 400 until golden brown.

I HAVE A VERY IMPORTANT QUESTION THAT I HOPE YOU CAN HELP ME WITH. AFTER SEEING YOU ON GTU UTAH, I SIGNED UP HOPING TO WIN (AS BEING A SINGLE MOM, EVERY BIT COUNTS RIGHT NOW...ITS SCARY FOR ME.) That is a great question. I have several family members that suffer from the same allergy to gluten. There are several great websites out there to help you find recipes that will work for your daughter. I have ground my own rice, oats, quinoa, etc. into flour that you can use in the place of wheat. Good luck, sorry I am not more help.
