I don't know about you, but on a hot summer night, I like to have easy meals that can be put together in minutes and that don't require my oven to be on all night.
This recipe (if you can call it that) comes from my brother in laws family and we LOVE it! Put these open face turkey sandwiches with a poppyseed spinach salad and you have a great dinner in a hurry!
Open Face Turkey Sandwiches
1 pkg. of Asiago Bagels (Costco has delicious ones for cheap)--cut in half
1 pkg. good quality turkey breast, sliced (I like the Kirkland sliced turkey)
Provolone cheese, sliced (Costco is the least expensive--I buy a large package and freeze them for later meals)
Bacon (you can buy the bits, or use turkey bacon--or, you can leave these out, they are still yummy!)
salt & pepper
Cut the bagels in half and place on a cookie sheet. Spread a generous amount of mayo on each bagel. Place several spinach leaves on top of the bagel, and then the slices of turkey. Place the sliced tomatoes on the turkey and then cover with a slice of provolone cheese and the bacon. Season tops with salt & pepper. Broil on the lowest rack at 500 for a few minutes until the cheese is melted. You can also bake these at 400 for 5-10 minutes if you would rather.
