In memory of summer...
Bring on the soups, breads, warm meals--I love all of that! However, after many heavy meals and warm soups, I am still craving a crisp and healthy salad (okay..somewhat healthy). I LOVE a good salad for dinner. Even my husband who is a 'meat and potatoes' kind of a guy, enjoys a salad filled with great ingredients. This Golden Gate Chinese Salad is one of my TOP 4-5 salads. I love the dressing (pretty much I could drink it!) and the peppers and chinese noodles with it..yum!!!
So, if on a dreary-rainy fall day you need something to make you feel tropical and summery again, try this salad. It will feel good to get some veggies back into your diet :)
Golden Gate Chinese Salad
2 chicken breasts, cooked and cooled
8 cups Napa cabbage (or romaine lettuce), thinly sliced
1 medium red pepper, cut into strips
1 medium yellow pepper, cut into strips
½ c. green onions
½ c. sesame seeds
1 can mandarin oranges (you can even add pineapple too if you would like)
1 ½ c. chow mein noodles
2 T. lemon pepper
1/2 c. oil
1/2 c. sugar
1 t. salt
1 t. sesame seeds
3 T. soy sauce
2 T. seasoned rice vinegar
1/2 t. sesame seed oil
1 t. fresh garlic, minced
Cook chicken breasts and cool. Heavily coat chicken with lemon pepper. Mix dressing well in blender. Layer salad and enjoy!
