There is a restaurant in California that serves the most divine fish tacos I have ever had! My sisters and I have tried multiple times to recreate the Baja Fresh Taco and have come pretty close in our opinion with the following recipe. You can play around with this recipe with ingredients that your family prefers, but either way--it is delicious and fresh!
First off..the fish. If you love to cook fish but have not found the perfect method yet. This could be the answer for you! The clean up is easy, cooking is simple, and the fish turns out moist and flaky every time.
Here is what I do:
First, create a pan like shape from aluminum foil. Place the foil on top of a cookie sheet. Drizzle olive oil or melted butter on the bottom of the foil (you don't need too much, maybe a tablespoon or two). Place fish fillets of your choice on the foil. I have done this with halibut, tilapia, and salmon. Each of them work perfectly with this method.
Sprinkle a generous amount of seasonings over the fish--whatever seasonings you like. I use Cajun seasoning, LOTS of pepper, salt, garlic powder, paprika, cayenne pepper, etc.
Put the fish under the broiler at 500 degrees for 5-10 minutes. Watch the fish through your oven window to make sure it doesn't burn. The edges of the fish will become somewhat blackened from all of the seasonings. This is okay, it gives the fish great flavor! Check the fish after 5-7 minutes to see if it is flaky and white. When it is done, remove the pan from the oven and let cool while you prepare the tacos.
For the tacos, use a flour or corn tortilla that is slightly warmed (the fresh tortillas you cook over the stove are my favorite). Then add shredded green cabbage (and red if you like red), shredded cheddar cheese, diced tomatoes, green onions, and fresh limes for garnish (I love LOTS of lime!). Place a fillet on each taco and serve with a generous amount of dressing. YUM!!
¾ c. Ranch Dressing
½ c. salsa
1 1/2 tsp. dill weed
1/2 tsp. lemon pepper
3 T. lime juice
1 tsp. ground pepper
1/8 tsp. ground red pepper
½ tsp. horseradish (optional)
salt and pepper to taste
2 T. cilantro
Blend all ingredients together in a blender until smooth.
