Sandwich or Salad? BBQ Chicken Ranch Salad & BLT Sandwiches

A quick and easy meal in our house are BLT sandwiches. We eat these often in the summer when our garden tomatoes are fresh and delicious. If you love the traditional BLT sandwich you will LOVE this BLT Chicken Salad. This salad is crisp, fresh, salty, sweet, and AMAZING! Not only does it taste great, but it is also a very pretty salad. The colors are beautiful and make for a great brunch, lunch, or dinner. Invite friends or family over and enjoy this delicious lunch or dinner--food is always more fun when it is enjoyed with people you love.

The hardest part to this meal is cooking up the bacon and chopping the ingredients. If you like the precooked and crumbled bacon (Costco sales some that is really good), this salad could be thrown together in no time. The salad dressing comes together in minutes and gives your salad a sweet and savory taste. I am a 'ranch snob' and my families favorite Ranch dressing is Gregg's Ranch from Costco. It is the best ranch we have found for the price.

Make this salad extra special and make your own croutons:

Here is the recipe--enjoy!

BLT Chicken Salad
½ c. ranch dressing
3-4 T. BBQ Sauce
2 T. onion, chopped
1 t. Lemon juice
¼ t. pepper
8 c. torn salad greens
2 large tomatoes, chopped
Green onions, sliced
Croutons
1 ½ lb. Boneless, chicken breasts, cooked & cubed
10 bacon strips, cooked & crumbled
2 eggs, boiled & sliced


In a small bowl, combine the first 5 ingredients. Mix well, cover and refrigerate until serving. Place salad greens on a large serving platter. Sprinkle with tomatoes, chicken and bacon. Garnish with eggs. Drizzle with dressing. Avocados also make a yummy addition.

LOW FAT VERSION: Omit bacon and use light ranch dressing.

that looks SO good! I love so many of the rescipes you do for deals to meals!! favorite right now was that beach street lemon pasta thing and ofcourse the cornbread cake!!!

This has nothing to do with the recipe, but I have been thinking of you for the last 24 hours. I am cocerned for your food storage shelves. You don't have cross bars along the fronts. I have a friend who was on his mission in CA durring a big earth quake, part of his mission became about clean up for the members instead of conversion. So many of the members were so devastated because they didn't have latches on caminets and cross bars to hold their food on the shelves. Sure, your can's will be able to fall and be just fine . . . but if there is standing water many of the labels will soak off.
Just a thought!
