Pumpkin Favorites & Pumkin Shakes
>> Saturday, November 6, 2010
Last year I made a post about some of my favorite pumpkin recipes. Because canned pumpkin only goes on sale once during the year, that is the time to stock up! What do you do with all of the pumpkin you purchase each November? Visit this post to find out some delicious recipes!
Here is one more to add to your collection: Pumpkin Shakes. I love the Arctic Circle Pumpkin Pie Shakes but can rarely stomach paying $3 for a small shake. Not to mention, homemade shakes are always better anyway! Try making these simple shakes in the comfort of your own home for the perfect holiday treat.
Perfect Pumpkin Shakes
1/2 of a 48-56 oz. carton of vanilla ice cream (Butter Pecan ice cream also works great!!)
2/3 c. canned pumpkin (or more)
1 t. cinnamon
Dash of nutmeg
2 T. brown sugar
1/4-1/2 c. milk or half & half
3-5 ice cubes (optional-this gives it more of an icy texture and helps thicken the shake)
Heavy whipping cream or Cool Whip
Caramelized walnuts or pecans
In a blender, add the vanilla ice cream, milk, pumpkin, brown sugar, spices and blend until smooth. If you want a thicker texture you can add the ice cubes and continue to puree (optional). Once the mixture is smooth, place in a cup/goblet and top with the whipping cream and caramelized walnuts/pecans and another dash of cinnamon.
Happy Holidays!

Just wondering why I wasn't invited over to try these out??? This is my personal FAVORITE shake of all time! I think we will be making these...today!! YUM.
Just thought I would share my kids favorite pumpkin recipe. It is very easy and totally a food storage recipe. 1 can pumpkin (15 oz I think the small one), 1 yellow cake mix and chocolate chips. Mix cake and pumkin up and then add chocolate chips. Bake in muffin tins. Super moist and yummy.
