For those of you who have known me for awhile (you know, in our blog-world-friend sort of way), you know I love-love-love case lot time. I know this is kind of a novelty to those of us who live in the western United States, but this time of year makes me giddy. I love tax return time when I get to go and spend some of our return on bulking up my food storage. Buying food gives me warm fuzzies--SO much more fun than buying anything else to me. Cute clothes, jewelry--no thank you! Just give me a case of tuna fish and I am a happy gal!
So, if you live in Utah, Nevada, Idaho, Wyoming, and Montana (even a few stores in WA)...RUN, don't walk, to your nearest grocery store that is having case lot sales and bulk up your food storage at these great low prices. Here in Utah, nearly every store this week is having great deals on certain items. How do you know what a good deal is and what items to stock up on? Do you buy everything that is sold in a case assuming it is a good deal? Oh, contraire!! Don't be fooled by the case sales. You need to be a smart shopper and know exactly which deals this week are screamin-shoutin'-rootin-tootin' good deals. That is what I am for!! Don't waste your time looking through the ads, that is my job. Being a member to Deals to Meals will make your grocery shopping experience this week a breeze! Hey..for all I care, sign up for the 2 week free trial, go shopping and come home and cancel your membership. I would rather you get your food storage at a good deal and then have you cancel, than for you to not get any food. (However..I do have to admit I hope you like our service enough to stay forever ;0)

I know I talk a lot about food storage and it's importance, but I can't tell you enough what a crazy world we live in (shocking, I know). If you are one who watches prices of groceries, it is no surprise to you that food prices are skyrocketing!! Just to give you an idea...when I was first married (a wee 12 years ago--I am such a young lad) I used to buy a 25lb. bag of granulated sugar for $2.99 on sale at Maceys. Sugar has now gone up to almost $16 for a 25lb. bag at Costco/Sam's and over $21 at the LDS Dry Pack Cannery. That is a crazy jump in price in just the past 10 years. Think of how expensive it could be in another 10 years. Scary!!
Not only is sugar going up, but nearly every item your family eats on a regular basis--wheat, rice, flour, sugar, oil, meat, seafood, canned goods, and produce. All of these items are having HUGE price increases lately. One of my favorite benefits of having your own 'store' in your basement (or your food storage) is it is like you are freeze framing your grocery budget for the next year. If you buy food at low prices today, and you buy as close to a year supply as you can afford, you will NOT have to buy that item again for another year at regular price (fab!!). Shop this way for all of the items you use on a regular basis, a little at a time, and pretty soon you will have your year supply of food that was purchased at rock bottom prices and you won't care for the next year if flour gets to $20 for a 25lb. bag.
I am not a prophetic person, or anyone who knows much about anything real (I have a lot of random knowledge), but I do feel that some of these prices we may never see again in our life times (sad!). Sounds crazy, but if gas prices continue to rise, inflation or hyperinflation happens, devaluing of the dollar, wars continue throughout the world, government debt increases, and so on, and so on, there is little chance food prices will plummet for no reason. So..stock up, get prepared and your future self will thank you!

Alright, I know, I know, bean month is over (I am adicted!), I have to share a recipe that you will laugh at. This is when I know I am taking this bean experimentation a little too far. I went out this month with a bomb! Pinto Bean Coconut Pie. You might be saying, WHY would you think that even has a possibility of being good? I really had faith and believed this recipe could have potential. Well, I have to admit I was disappointed. Although this pie was not disgusting by any means, I just can't picture a time when I would be craving it or want to make it again. The texture was too thick, but the flavor was surprisingly tasty. I guess you could keep this recipe on hand for an emergency if you needed a protein filled pick-me-up dessert.
Coconut Pinto Bean Pie
2 eggs well beaten
1 C Brown sugar
1 C evaporated milk
1/2 C coconut
2 t vanilla
1 C plain pinto cooked beans (1/3 t salt if not added when cooking beans)
1 t pumpkin spice (or 1/4 t allspice, ginger, nutmeg & 1/2 t of Cinnamon)
Blend beans together until smooth. Mix all of the other ingredients together with the pureed beans. Put in a bottom and bake at 350 degrees or until a knife comes out clean. Serve with whipped topping.
I did however LOVE these white bean spice & sour cream frosting cupcakes. I found a new and inexpensive trick. I made white bean spice cupcakes today and didn't have any thawed cream cheese in my fridge. I made my frosting instead with sour cream and it was delicious and much lower in fat! The recipe was the following:
Sour Cream Frosting
6 T. butter, softened
1/2 c. fat free or lowfat sour cream
1 t. vanilla
Dash of salt
1-1/2 lbs. of powdered sugar
Beat together until smooth and it had the creamy-sour taste of cream cheese but without all the fat. LOVED it!!!
