
My Grandma Lucy is one of my favorite people. She is as close to perfection as one person can get she only has one major flaw....SHE HATES CHOCOLATE!
Can you believe the monstrosity? Who in their right mind can possibly hate that silky goodness?
I simply don't understand it but for Grandma Lucy's birthday I am forced to understand it! It would be totally unacceptable to show up to her birthday party with a delicious chocolate or peanut butter chocolate cake!
For that reason I racked my memory of delicious cake recipes and found this one, a favorite, that I don't make as often as I should. It is called Hawaiian Delight Cake which is a perfect dessert for a hot July birthday! I know it would also be great for an August birthday or BBQ, too. It is very easy, incredibly light and refreshing! My husband, who doesn't love sweets, enjoyed the leftovers of this dessert for two nights following the party, that never happens!
Trust me, the picture doesn't look as tasty as the cake really is, try it and I promise you
will love it!
Hawaiian Delight Cake
1 yellow cake mix
1 8 oz. package cream cheese
2 cups milk
1 6 oz. package instant vanilla pudding
1 20 oz. crushed pineapple, drained, save juice
1 8 oz. cool whip
1 cup coconut
macadamia or slivered almonds, optional
Bake the cake according to package directions but on a cookie sheet. It might need less baking time since the cake will be thinner. Let the cake cool. Cream the cream cheese and milk together, then add the pudding and reserved pineapple juice. Spread the pudding mixture over the cake. Mix the drained crushed pineapple and the cool whip and spread over the pudding layer on the cake. Sprinkle with coconut and nuts if desired. Keep the cake refrigerated.

I used to hate chocolate too. It's still not my favorite, but it's grown on me. My favorite cake is white with raspberry filling and buttercream frosting...or oatmeal cake. Yum.
So I have an off topic comment but I didn't know how to comment on your other site, I saw that you put up the case lot sale info and I'm wondering if I should stock up on everything, or do you think Smiths will have better deals then Lins? When does Smiths typically do their case lots? Thanks!
Check the Lin's sales and compare them to Macey's deals. Any that are the same great/red deals as Maceys, I would stock up this week. The Macey's deals are as low as I have ever seen at Smiths. The only item that is not fabulous is the flour (25lb. $7.49). Costco is just under that price and so stocking up on that is not a huge priority. I will wait and see if that gets less at Smiths. Most likely SMiths will have their case lot sale in the next few weeks too :) Good luck to you!
I love the looks of this cake and need to make a birthday cake for tomorrow. Do you think this cake can be made in the standard 9 x 13 cake pan without many (or any) changes other than baking time?

Yes, it would work fine in a 9x13 pan. The only reason we do a cookie sheet (jelly roll) pan is because with all of the toppings it tends to get a little too tall for the pan. You will either have to cut back on the toppings or maybe use some of the batter for a couple muffins to keep the cake a little shorter.
