Well..what does that have to do with my post? Tonight for family home evening I wanted to make our dinner something the kids would enjoy that had a Halloween twist. I didn't have a lot of time since we were on our way out the door to see the witches at Gardner Village (a favorite Halloween tradition!), so these sloppy sliders seemed just the ticket!
If you need a little holiday cheer added to your next dinner, try these fabulous 'Pumpkin' Sloppy Sliders!
2 T. olive oil
1/2 onion, diced
2 stalks celery, diced
1 green bell pepper, diced
2 lbs. lean ground turkey or ground chicken (I used 1 lb. of each)
Dice the celery, onions and green bell pepper into small pieces. Place vegetables in a large saute pan with the olive oil and cook until the vegetables are slightly tender. Add to the vegetables the ground turkey or chicken and brown the meat until it is broken up and browned. Once the meat is cooked, drain the excess juices from the pan. Add the following ingredients to the meat and vegetable mixture:
1 c. Franks Hot Sauce (if you don't like your sliders so spicy, use more tomato sauce and less hot sauce)
1/2 c. tomato sauce
1/4 c. brown sugar
2 T. ketchup
1 T. Worcestershire sauce
1 T. red wine vinegar
1 t. salt
1/2 t. black pepper
1/2 t. garlic powder (or 2 cloves freshly minced garlic)
Simmer meat mixture until the flavors have combined and you are ready to serve the sliders.
30 Minute Rolls--made extra small and died with orange food coloring (red and yellow)--if you don't have time for homemade rolls, regular hamburger buns would do.
Celery sticks for the stems, cut up and place in the top of the sliders
Blue cheese crumbles or feta cheese, sprinkle on top of the sliders. If you want to cool down the spiciness, I added a little dab or ranch dressing to my sandwich and the creaminess it added was awesome!
Vampire ApplesCut off each side of an apple just far enough that none of the seeds are left in either side of the apple. Cut out a v-shape from the center of each apple from the back side of the apple. Remove the piece of apple and place two almonds into the top portion of the apple (these are the teeth of the vampire). Very easy and a very healthy snack :)
