Chocolate Peanut Popcorn Gumbo

If you are looking for a simple, fun and tasty Halloween treat, this Peanut Popcorn Gumbo is totally fun and addicting. I am a HUGE fan of honey roasted peanuts. I don't know what it is about them. Maybe it's the nostalgia of remembering when my Dad would bring us bags home from his business trips or just the fact they are the perfect combination of sweet & salty. The buttery popcorn and the salty peanuts with the melted chocolate and candy corn makes for a salty sweet treat your family is sure to love!

Chocolate Peanut Popcorn Gumbo
1 microwave popcorn
1/2 c. white chocolate chips
1/2 c. butterscotch chips
1/2 c. honey roasted peanuts
1/2 c. candy corn
Pop the popcorn in the microwave until it's cooked.Pour the popcorn into a large bowl, being careful to not put any kernels in the bowl. Pour the peanuts and candy corn into the popcorn. In a microwave safe bowl microwave the chocolate chips for 30 seconds at a time, stirring every 30 seconds until the chocolate is smooth. Pour the chocolate over the popcorn  and stir until the kernels are covered in the chocolate. Serve the popcorn warm or cold. If you eat it sticky, just be ready to lick your fingers ;)

Yum! But why is it named after a Cajun/Creole soup?

Ha! Good question :) My mom used to always call conglomerations of food Gumbo. I love Gumbo soup, but yes, that might be the wrong name ;) Just old habit I guess. Pretty much any 'gumbo' with chocolate is good, right?
